ingredients

  • jackfruit in brine
  • thai green curry sauce
  • olive oil
  • frozen vegetables
  • quinoa and white rice
  • vegetable stock
  • pink salt

preparation

  1. boil 2 cups of water with 1 tsp olive oil and 1 tsp pink salt.
  2. rinse rice and quinoa, add to boiling water and cook on low heat for 15 to 18 minutes.
  3. place ½ can (2 oz) of jackfruit, including brine in a small saucepan with 6 oz of thai green curry sauce and ¼ cup vegetable stock. Boil on medium to low heat for 10.
  4. when rice/quinoa mixture is ready, remove from heat and place to the side to cool.
  5. add bag of frozen vegetables and 2 tbs olive oil, and let simmer for 10-12 minutes, letting the vegetables get soft.

6.    plate and enjoy

tips

for thicker sauce add less vegetable stock. If you enjoy a flavorful broth add more vegetable stock, or water (add additional liquid in small amounts). Coconut oil, avocado oil and ghee are all wonderful substitutes for olive oil.

jackfruit is commonly found throughout aisa. it contains fleshy pods which when unripe, (green) take on the flavor and texture of meat; think a rich artichoke heart flavor. full of  isoflavones, antioxidants, and phytonutrients loading this superfood up with cancer-fighting properties.

i use trader joe’s brand, which i find to be flavorful and the brine makes cook time much quicker. (try the frozen curry jackfruit meal, you’ll be happy you did).
